Low Carb Banana Nut Hemp Cereal

A delicious and nutritious low-carb cereal option packed with hemp hearts, nuts, and seeds, flavored with banana and cinnamon.

Ingredients:

  • 1 cup hemp hearts

  • 1/4 cup chopped walnuts

  • 2 tablespoons unsweetened shredded coconut

  • 1 tablespoon chia seeds

  • 1 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1 medium ripe banana, mashed

  • 1 tablespoon coconut oil

  • Optional: stevia or monk fruit sweetener to taste

Instructions:

Preheat oven to 300F 150C


In a mixing bowl, combine hemp hearts, chopped walnuts, shredded coconut, chia seeds, cinnamon, and salt


In a separate small bowl, mash the banana and mix in coconut oil and sweetener if using


Pour the banana mixture over the dry ingredients and stir until well combined


Spread the mixture evenly on a baking sheet lined with parchment paper


Bake for 20-25 minutes, stirring halfway through, until golden brown and fragrant


Allow the cereal to cool completely before storing in an airtight container


Serve with almond milk or your choice of low-carb milk alternative

Grilled Onion Grilled Cheese

Enjoy the tasty treat of a Grilled Onion Grilled Cheese sandwich. This dish is very comforting because the caramelized onions and gooey cheese go so well together.

Ingredients:

  • 2 slices of bread

  • 2 tablespoons butter

  • 1/2 cup sliced onions

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup shredded mozzarella cheese

  • Salt and pepper to taste

Instructions:

Melt one tablespoon of butter over medium-low heat in a pan


It will take about 10 minutes of cooking after adding the sliced onions until they get soft and caramelized


Add pepper and salt


Take the onions out of the pan and set them aside


On one side of each slice of bread, spread the last tablespoon of butter


Put one slice of bread in the pan over medium-low heat with the butter side down


Quickly put down half of the cheddar cheese, then the onions that have been sauted, the mozzarella cheese, and finally the rest of the cheddar cheese


Put the second slice of bread on top, butter side up


It will take about 34 minutes of cooking until the bottom slice is golden brown and the cheese starts to melt


The other side of the sandwich should be cooked for another 34 minutes, or until it's also golden brown and the cheese is melted


Take it out of the pan, cut it in half, and serve it hot
